If you need to spice up an appetizer – this is it. I can’t even comprehend how AMAZING coconut onion rings are. Usually when I have a taste for o-rings, I get full and immediately feel like I should not have eaten them (despite how delicious they are).. but with the coconut, they are SO light. Because I mixed the batter with coconut milk and flakes, it has just a HINT of coconut. Enough to taste it, yet not be overwhelming.
What you’ll need:
- Buttermilk
- Coconut milk
- Smoked Paprika
- Flour
- Bread crumbs
- Ground coconut
So first things first, mix together 50/50 buttermilk and coconut milk. Add and stir in the paprika. Mix together a heaping teaspoon of flour, breadcrumbs and 2 tablespoons of ground coconut.
Cut your onions into rings, then dip them into the buttermilk mixture. Now dip them into the coconut/flour mix. and repeat until the whole onion is covered. Set it aside as you repeat with all the rest of them.
Heat up 1-2 inches of oil in a pot or pan on medium. Drop in the onion rings and let’em fry! Turn over if neccessary.
You’re done! You’ll definitely be trying coconut onion rings again!
