Looking for an easy dessert? Make this super easy pudding in TEN minutes. Better yet, it only has four ingredients. Cocoa, sugar substitute, xantham gum and heavy whipping cream.
Xantham gum is a pretty good thickener.. and you only need a small amount. You can find it at any grocery store, usually in the organic section. I used Bob’s Red Mill brand.
What you’ll need:
- 1/2 cup unsweetened cocoa
- 1/2 cup sugar substitute (I used xylitol)
- 1/2 tsp xantham gum
- 1 1/2 cups heavy whipping cream
In a small sauce pan, mix together your dry ingredients. Slowly whisk in your whipping cream.
When it’s all mixed in, turn your burner on to medium and bring the pudding to a boil.. stir constantly!!! That’s so important.
It will start to thicken pretty much immediately. Once you can dip a spoon into the pudding and it comes out covered in pudding, you’re done!
Take off the burner, pour into bowls and chill!
