Ok – so let me get this out of the way – I’m not a big fan of curry.. especially when it’s drenched in curry sauce. However.. this recipe blew my mind! It was so delicious! AND you probably have all the spices already in your cupboard/pantry!
Because this recipe has a ton of protein, I recommend using your side dish to get in your fat!
What you’ll need:
- 3 tbsp coriander seeds
- 1 tbsp cumin
- 1 tbsp tumeric
- 1 tbsp dry mustard
- 1/2 tsp ground ginger
- 1 tsp cloves
- 1 tsp cinnamon
- 1 tbsp ground chilli’s
- 10 chicken thighs
In a bowl, mix together ALL your spices. Using a mortar and pistol, blender or grinder, grind your spices down finely!
You don’t have to do this, but I wiped down my chicken ahead of time to get all the water off.
Pour your spices onto the chicken and mix thoroughly so your chicken is covered in the delicious curry powder.
Throw it into a casserole dish and bake at 350 for 1 hour.

It worked perfectly for me, but if you feel it’s too long, try 45 minutes!
