Looking for a good pizza recipe??? I made such a delicious pizza with fathead dough, zucchini and goat cheese. It was SO GOOD and great for vegetarians!
What you’ll need:
- 1 cup almond flour
- 2 1/4 cups mozzarella cheese
- 3 zucchini, sliced
- 125g creamy goat cheese
- dried onion
- garlic powder
- parsley
- oregano
In a microwavable bowl, heat up your mozzarella cheese until it is all melted.
Add in your almond flour and mix until a dough has been formed.
Lay your dough out on a piece of parchment paper. Place another piece of parchment paper on top of the dough and use a rolling pin to roll into a nice pizza crust.
Top your dough with the spices.
Using a spoon, spread the goats cheese all around the crust.
Slowly layer your zucchini slices onto the pizza. I used a cross stitch type layer but you can do whatever you want!
Bake your pizza at 350 for 30-45 minutes or until the dough is a nice golden brown.
Take out, cut and enjoy! THis makes roughly 8 slices.

This is super good!! I froze half the dough as I am alone and fresh is best! I’m making it again soon!!
