Salads are a staple for me on the keto diet. I’ve tried so many different kinds and I can say with certainty that the strawberry pumpkin seed salad is one of my favourites. The combination of strawberries, feta and balsamic vinegar with the crisp baby spinach is great for a summer picnic.
You don’t have to use JUST baby spinach. I think this salad would taste amazing using a nice blend of different kinds of lettuce.
I used a nice balsamic vinegar for the dressing – but it also tastes amazing with a nice raspberry vinaigrette. However because the fruits have some sugars in it, the raspberry dressing may not be in your macros.
What you will need:
- 250g of baby spinach
- ⅓ cup of pumpkin seeds
- 10 strawberries – chopped
- 80g feta cheese – crumbled
- 4 tbsp balsamic vinegar
- 2 tbsp olive oil
Combine your spinach, sunflower seeds, feta and strawberries into a salad bowl. In a small bowl, mix together your balsamic vinegar and olive oil. Serve and top with balsamic vinegar dressing.
