So since moving to Ireland, I spent a few weeks hopping from Air BnB, to another Air BnB, to a friends place. During those times, I tried a few traditional & non-keto foods like chips, cheese curry. WHICH IS AMAZING.
It’s basically poutine.. fries (aka chips) cheese and curry sauce (instead of gravy). It’s the best. So I wanted to make a keto version.
I used halloumi since it’s a good cheese that doesn’t melt into a puddle when heated.
What you’ll need:
FRIES
- 500g halloumi cheese cut into strips
- almond flour (roughly 1 cup)
- curry powder (2 tbsp)
SAUCE
- 2 tbsp curry powder
- 1 cup (235ml) water
- 1/2 tsp xanthan gum
- salt/pepper
Make your fries/chips first since it is the most time consuming. In a bowl, mix together your almond flour and curry powder.
Take a strip of halloumi and drop it in the almond flour mix, making sure it gets coated all around. The cheese should come in a package that includes a little water so you won’t need to use an egg to make the almond flour to stick.
Place the coated halloumi onto a lined baking sheet. Once finished, bake for roughly 15 minutes at 400f/200c.
In the meantime, stir together your curry powder and water in a pot. Bring it to a boil before adding in your xanthan gum and turning the heat down to low. Wait until the curry thickens up.
Once done – place the fries on a plate and smother with the curry sauce! You can also add in mozzarella but you may find that to be TOO much cheese.
This party platter serves 6 people!
