So lately I’ve been on a baking kick. Today I decided to forgo the treats and do something a bit different! Now I know these have been done to death but I LOVE these so much. They go great with hamburgers, hotdogs, BBQ dishes (all keto of course). Plus they are super simple to make!
Now – my suggestion is to get authentic parmesan cheese and grate it yourself. It’s annoying I know, but you will save yourself the carbs! Unless you can find a decent pre-grated, fresh kind, it’s usually packed with starches. I found one at Tesco that was only fresh and had 0 carbs per 100g!
What you will need:
- 1 package (150g) asparagus
- 1 package (220g) green beans
- 2 eggs
- 1 cup (100g) almond flour
- 1 cup (100g) parmesan cheese
- Salt (optional but recommended)
Take two (fairly large) plates. On one plate, mix together your parmesan cheese, almond flour and salt. On the other place, whisk your eggs together.
Take a green bean (make sure they are dry) and coat it with the egg. Then dip the same green bean into the almond flour/cheese mixture and make sure it is fully coated.
Take your green bean and then place it onto a baking sheet lined with parchment paper.
Continue to dip your green beans into the egg, then the flour/cheese until all of them are coated. Do the same with the asparagus. Again make sure the asparagus is dry before coating with the egg. If they are wet, the egg will just slide off.
Bake at 350f (176c) for 35 minutes or until nice and brown.
