Fall is right around the corner! Better start planning your comfort meals. This one is definitely one for the books plus it’s SUPER easy. One thing I will say, is keep the spices low – especially nutmeg because otherwise it will ruin it!
What you will need:
- 2 cups (500g) pureed pumpkin
- 1 cup vegetable broth
- 1 cup heavy cream
- 1 tsp nutmeg
- 1/2 tsp allspice
- 1 tsp cinnamon
- salt/pepper
- 1 tsp minced ginger
Place all your ingredients into a deep pan (or blender). Use a immersion blender (or regular blender) to puree all the ingredients together.
Pour the soup into a stovetop pot and bring it to a boil.
Serve hot & drizzle a small amount of cream into the soup. Top with fresh parsley or oregano.
This makes roughly 8 servings.

You could use beef or chicken broth if you prefer those. If not, you could replace it with full fat coconut milk!
