It’s raining outside. What else is new in Ireland. I decided to hop on the fall train and make some SOUP! Of course potato and leek soup is a big staple in autumn but since we can’t eat potatoes, I substituted it with cauliflower rice. However, you could also use cauliflower chunks!
What you’ll need:
- 2 tbsp butter
- 1/2 cup (44g) leeks – chopped
- 3 garlic cloves – minced
- 1 tsp parsley
- 1 tsp paprika
- 3/4 cup (75g) cauliflower rice
- 1 tsp xanthan gum
- 1 cup (235ml) broth
- 1 cup (235ml) heavy cream

Directions:
In a deep pot, melt your butter and saute the leeks, cauliflower, garlic, parsley and paprika for approximately 5 minutes.
Sprinkle the xanthan gum onto the vegetables and stir in.
Pour in your broth and heavy cream. Bring to a boil, stirring occasionally.
Serve!
This makes 4 servings.
