Ok – it’s starting to get cold. Today I had to wear a HOOD because the wind was too brisk for my liking. You know what helps you warm up? SOUP. Especially broccoli and cheddar soup.
What you’ll need:
- 2 cups (473ml) broth (I used vegetable)
- 1 cup (236ml) heavy cream
- 1 head of broccoli (350g) chopped
- 1 tbsp onion powder
- 1 tbsp garlic powder
- 1 tsp xanthan gum (optional)
- 3 1/2 cups (350g) cheddar cheese – grated

Low carb option: fried onions for topping!
This soup is SOUPER easy to make 😉
Place your broth, garlic powder, onion powder, cream and broccoli into a blender. Blend until smooth and no chunks are visible.
If choosing to use xanthan gum, add it into the blender here and blend.
Pour the soup into a large pot and bring to a boil on medium heat.
Add in a small amount of cheese and whisk until it has melted in. Continue to add in the rest of the cheese little by little.
**Make sure the cheese has melted before adding in more otherwise the cheese will clump together and make the soup seem grainy
Once all your cheese is gone you’re done!
Top with some salt and pepper, serve and enjoy!
