If you are looking for an easy recipe to just pop in the oven, I highly recommend this thyme and rosemary chicken. It’s so simple and it comes out so flavourful and juicy!
Easy and simple recipes are what I am super into at the moment. It’s winter and when I come home from work in the cold – I just need to throw something in the oven. This rosemary chicken is definitely one of my go-tos.
What you will need to make thyme and rosemary chicken:
- 1 whole chicken (flattened or regular)
- 1 onion – chopped
- Red wine
- Italian seasoning
- Minced garlic
- Chilli flakes
- Olive oil
- Salt/pepper
- Fresh sprig of rosemary
- Fresh sprig of thyme
So my oven only took about an hour to completely cook this and crisp up the skin using the broiler.. but you’re oven may be different and that’s why it’s super important to double check whether the chicken is fully cooked by using a temperature.
Chicken must be above 165F for it to be safe for consuming. While 165F is safe – you might want to cook it to 175F. Always make sure to take the remperature from the meatiest part of the bird.
One note about the wine used in this recipe – make sure it is dry wine – it will have minimal sugars! Secondly if you want to omit the wine, I would use about 1/4 cup of sugar free tomato sauce and add in 1-2 tbsp of red wine vinegar. That will keep the acidity and tartness from the wine without the alcohol content.
How to make this one pot chicken recipe
Other than cutting the onion – there’s not much prep for this recipe. I like to oil the oven-safe pot before placing the onions in with the chicken on top.
Mix the rest of the ingredients in a small boil and brush it on to the chicken. Top with the sprigs of thyme and rosemary.
Then you just have to bake it at 350F for 1 hour and 10 minutes.
Once it’s done – I like to baste the chicken with its juices before broiling the chicken for an additional 7-10 minutes (or until its nicely browned) That’s it!
This could go really well with some cauliflower rice or even a nice refreshing salad!!

Thyme and Rosemary Chicken (Keto, Low Carb)
This thyme and rosemary chicken is the perfect meal to place in the oven and go! Ready in an hour and a half!
Ingredients
- 1 whole chicken (flattened or regular)
- 1 onion - chopped
- 1/4 tsp thyme
- Red wine
- Italian seasoning
- Minced garlic
- Chilli flakes
- Olive oil
- Salt/pepper
- Fresh sprig of rosemary
- Fresh sprig of thyme
Instructions
- Place the onions in a greased casserole dish, and place the chicken on top.
- In a bowl, mix together the rest of the ingredients minus the fresh thyme and rosemary.
- Brush the sauce on top of the chicken.
- Place the fresh sprigs of thyme and rosemary on top of the chicken.
- Bake at 350F for 1 hour and 10 minutes.
- Take out and baste with the juices.
- Broil for an additional 7-10 minutes or until a golden brown.
- Make sure the chicken is cooked to temperature.
- And enjoy!
